I've heard that pairing a Bordeaux with the right cheese can make a world of difference. Any favorites?

I recently tried a 2017 Bordeaux and was completely blown away by the complexity and layers of flavors. The balance of dark fruits and tannins was exceptional, and it lingered beautifully on the palate.

Would love to hear others' experiences with Bordeaux wines, especially if you've had different vintages.
